We try to eat healthy around here. I mean, don't get me wrong, we eat an occasional wurst or five. We eat healthy about 90% of the time though. The above plate is what we had for dinner last night. It was quick, light and yummy! Here's how I made it:
Ingredients:
1 box Whole Wheat/Grain bow tie pasta (or any other pasta)
1 lemon
2 Tbsp Capers
2 Tbsp Olive Oil
3 cloves garlic
2 TBSP basil (or 1/4 cup fresh)
Salt + Pepper
Leftover Grilled veggies (we made extra the night before and used red/yellow peppers, onion, mushrooms, & eggplant...anything would work though)
Salmon filets (1 per person)
How to make it:
1. Boil water and cook pasta according to directions.
2. While preparing noodles, mix together the juice of 1 lemon, 2 Tbsp Capers, 2 Tbsp Olive Oil, 3 cloves of garlic minced, 1 Tbsp basil, and a pinch of salt and pepper.
3. Also while preparing noodles, rub lemon (or squeeze out just a little more juice) on salmon and season with salt and pepper. Then saute salmon in a non-stick skillet until it reaches your preferred doneness level. (salmon could also be grilled or baked)
4. When noodles are cooked, drain the water.
5. Toss hot noodles and lemon mixture.
6. Warm leftover grilled veggies in the salmon saute pan (about 2 minutes) until warmed through. Then mix into the lemon pasta.
7. Sprinkle pasta with parm cheese.
8. Serve salmon with a side of pasta!
* You can also serve pasta over a bed of baby spinach
