Vegetarian "Meatballs" (Tyler didn't know the difference until I told him) and homemade bread
Rotisserie style chicken IN THE CROCKPOT!
I've been cooking again. I'm an avid reader of "A Year of CrockPotting." "The CrockPot Lady" has some really good recipes. Who knew that you could make more than just soup and roast in the crock? Here is a "Salsa Chicken Recipe" from her blog with notes from me.
--6-9 chicken thighs, or equivalent body parts (I used chicken tenders)
--1 can rinsed black beans
--1 cup chunky salsa (I put in more like 2c)
--1 cup frozen white corn (I used yellow)
The Directions. Put your chicken in the crockpot; mine was still frozen. Top with the rinsed black beans, salsa, and corn. Cover and cook on low for 6-9 hours, or on high for 4-5. Cooking time will vary depending on whether or not your chicken is frozen, and how big the pieces are.If you decide to use breasts, increase your salsa by 1/2 cup. Breasts are drier than thighs.

This was so yummy and EASY. My goodness was it easy. I love easy dinners. I made this Monday night because it was my oil painting class night and I was busy preping my canvass etc. Anyway, I shredded the chicken with two forks at the end and then used the mix to make burritos. (we added cheese and rice) Yum. Tuesday we used the leftovers to make quesadillas. Even yummier. : ) Mom you need to make this. : )
"The Crock Pot Lady" posted a recipe for making yogurt. I know it sounds kind of weird. I tried it. It tastes that plain German yogurt because the Commissary had no plain American yogurt. When I mixed honey and vanilla in it, it became much better.
